Asparagus & Crab Stir Fry

At this time of the year when there are so many heavy meals and rich dishes, a simple yet tasty dish such as this provides a welcome change. We hope you enjoy it.

Ingredients;

500 gms fresh asparagus, cut into 1 inch pieces.
155 gms crab meat (white or brown according to taste)
3 tblsp oil
1 tsp mustard seeds
1 large Bombay onion, peeled and sliced
Pound / blend together the following 4 items and set aside ;-
1/4 inch ginger, peeled and chopped
3 cloves garlic, peeled and chopped
3 shallots, peeled and sliced
1 red chili
3 curry leaves
30 mls water
salt to taste
Mix together the following 5 items and set aside for the final flavouring;
1 tsp cornflour
1 tblsp soy sauce
1 tsp lemon juice
1 tblsp oyster sauce
1 tsp sesame oil

Method;

1. Prepare the ingredients as above
2. Heat the oil in a wok, add the mustard seeds and heat until they pop.
3. Add the onion, pounded spices, curry leaves, mix well and fry for 1 minute.
4. Add the crab meat and stir fry for 2 to 3 minutes.
5. Add the asparagus together with 30 mls water, stir well, bring to the boil and then cover and simmer until the asparagus is tender [ about 10 to 20 minutes. ]
6. Add salt to taste. [you may find that the soy sauce provides enough seasoning]
7. Stir in the final flavouring mixture, heat through and serve with freshly cooked boiled rice.
