Dry Beef Curry with Spices

A traditional Beef dish originating from Kerala. Delicious served with yoghurt curry.

Ingredients;

750 gms Beef (Topside or similar works best but other cheaper cuts will do, remember to adjust the cooking time, as a cheaper cut needs longer cooking)
10 shallots, sliced
1 inch piece of cinnamon
1 1/2 tsp five spice powder
4 or 5 curry leaves
juice of 1/2 a lemon
300 millilitres coconut milk
1/2 tsp sugar
1 large potato, peeled and diced
1 tblsp tomato puree
3 tblsp oil
salt & pepper to taste
1/2 a coconut grated (or 225 gms desiccated), fry until light brown then blend
Pound or blend the following to a smooth paste and set aside :-
1 inch piece of ginger, peeled and chopped
1 lemon grass, chopped
1 tsp dried galangal (laos powder)
5 cloves of garlic, peeled and chopped
Mixed Spices
2 tsp chili powder
2 tblsp coriander
1 1/2 tsp turmeric
1/4 tsp fenugreek
1 tsp poppy seeds
1 1/2 tsp mustard seeds
For the final Flavouring
4/5 curry leaves
1 tsp mustard seeds
2/3 finely chopped shallots

Method;

1. Prepare the ingredients as above.
2. Heat the oil in a large pan or wok, fry the mustard seeds until they pop then add the onion, cinnamon and curry leaves and fry for one minute.
3. Add the meat and the mixed spices, mix well and fry until all the moisture has evaporated. Fry dry for a further one minute.
4. Add the coconut milk, potato, sugar, lemon juice, tomato puree, 300 millilitres of water and simmer until the meat is tender and the potato cooked, stirring occasionally.
5. Continue the cooking until the dish has dried out without burning and then add the roasted coconut. Stir well and remove from the heat.
6. Prepare the final flavouring; in a small pan heat a tablespoon of oil and add 4 or 5 curry leaves with a teaspoon of mustard seeds and two or three chopped shallots. Fry until the seeds pop.
7. Stir the final flavouring into the curry, mix well and heat through. Serve hot with bread, chapati or rice.
